Amankora in Gangtey is the epitome of a fairytale landscape. Arriving in the winter, I was welcomed by a pristine blanket of snow covering the majestic Himalayas. The sky, clear and crisp, was an intense blue, while the surrounding valleys, hills, and plains created a panoramic view that seemed to go on forever. The scenery was ever-changing, as one moment you could be gazing at the snow-capped mountains, and the next, a stunning river winding its way through the lush countryside.

Exploring the breathtaking Gangtey Valley, perhaps my favourite in Bhutan — though it’s nearly impossible to choose in a country that feels like a living painting — was an experience of pure magic. The valley, nestled in the heart of the Himalayas, offers an unparalleled landscape that shifts with every turn. After a day of mountain biking through the valley’s serene landscapes, Amankora offered the perfect refuge, weaving together the elements of tradition, nature and comfort into an unforgettable stay. The architecture of the lodge was a seamless extension of the landscape, with its stone and wood structures designed to blend into the natural surroundings, offering panoramic views that only enhance the beauty of the valley.
Sound of Serenity
The sounds of Gangtey are like no other. As I explored the countryside on a mountain bike, pedalling through hills that overlooked valleys and rivers, I could hear the soothing hum of nature. But it wasn’t just the rustling of the wind or the flow of water that filled the air; the rhythmic chants of monks from nearby temples blended with the sounds of nature, creating a spiritual soundtrack that echoed across the plains. It was as though the universe itself had found harmony in this peaceful corner of the world.

As I was biking through the hills, I passed by a group of monks who offered a prayer blessing, a deeply humbling and serene moment before I continued on my journey. The sound of their prayer chants filled the air, and I couldn’t help but feel an overwhelming sense of peace, as if the valley itself was offering me its protection and blessings.

The symphony of this valley is unique — distant honks of Black-Necked Cranes echoing through the crisp air, especially during the fall and winter months. As I soaked in the traditional hot stone bath at the nearby hut, the calls of the cranes provided an enchanting background to my experience. The serenity of the valley, coupled with the gentle whispers of the wind and the occasional chanting of monks, made it feel like I was living in a dream.

Bhutanese cuisine, rich in flavours and steeped in tradition, is an absolute treat for the taste buds. At Amankora, I had the pleasure of experiencing local dishes that were prepared with care and fresh ingredients sourced from the surrounding countryside. Homemade momos, chili cheese, and a delicious local potato soup were just a few of the delights I indulged in. I even got to try yak meat, which was incredibly tender and full of flavour. Each dish felt like a warm hug for the soul, deeply connected to the land and culture of Bhutan.
A true highlight was the Potato Shed Dinner, set in a working potato shed that had been transformed into a candlelit dining venue. The atmosphere was intimate and magical, and the food was not just a culinary delight but a meaningful experience that supported the local community. Dining in the shed was a beautiful way to connect with the land and the people, knowing that each dish was crafted with love and care, sourced directly from the hardworking farmers of the valley.

The temperatures in Gangtey were crisp and refreshing, making it the perfect environment to experience the traditional hot stone bath. This ancient Bhutanese ritual, believed to have healing properties, was an experience I will never forget. The warm stones, heated over a fire, were carefully placed in the bath, releasing heat and minerals into the water. As I soaked, the warmth seeped into my body, easing my muscles and calming my mind. The bamboo doors of the hut provided privacy, yet left me open to the crisp mountain breeze, grounding me in the natural world around me.
The bath is not just about relaxation, but about rejuvenation. The minerals in the stones are said to detoxify the body, increase circulation, and soothe the skin. With the Khempa herb infused into the bath, the experience was both physically and spiritually restorative. I felt the cold mountain air, the warmth of the water, and the connection to centuries-old healing traditions. It was a deeply meditative moment, perfect after a day of adventure in the valley.
Bhutan has a special energy that is hard to put into words. It’s a place where the noise of everyday life fades away, and the soul can finally breathe. The people are kind, warm-hearted and radiate a genuine friendliness that makes you feel at home. It’s a place where the mask we all wear in our busy lives can finally come off. In Bhutan, there’s a deep sense of connection to oneself and to the environment.

When we say Zamboanga City is colorful, we’re not just referring to the color-blocked sail of the vinta or the rosy glow of Santa Cruz Grande Island’s Pink Beach. The vividness of Asia’s Latin City goes beyond what the eyes can see. Its intricate history as a settlement and kaleidoscopic mix of cultures are best experienced through another fundamental sense — the sense of taste.
Zamboanga City is one of our most-loved food destinations for the sheer range and diversity of what it can bring to the (dining) table. From the saucy red-orange sticks of satti to the motley flavors of knickerbocker, here are some of Zamboanga’s most sought-after culinary delights and where to find them.
If it sounds familiar, it’s probably because it reminds you of La Cucaracha, a Mexican folk song about a cockroach that also became pretty popular in the Philippines. Curacha (in Chavacano) and cucaracha (in Spanish) mean the same — cockroach. And it’s no surprise given that Chavacano, Zamboanga’s dominant language, is a Spanish-based Creole.
But before you lose your appetite, know that we’re not going to ask you to go full Fear Factor in Zamboanga. Instead, we’re inviting you to have a taste of the most mouth-watering crustaceans that the region has to offer — spanner crabs!
Curacha got its name because of its spiky, hairy appearance that kinda resembles you-know-what. But if you look closely, it kinda appears like the love child of a wide crab and a long lobster. And because it packs more meat and more flavor than the crabs we’re used to, they are sought after. Thankfully, they thrive in the waters surrounding the region.
For many, the best place to have a taste of curacha is Alavar Seafood Restaurant, which serves curacha cooked in and doused with its famous specialty sauce, which is made from coconut milk, aligue (crab roe paste) and various spices. This super rich sauce combined with the seafood umami bombs that are curacha, you’ll never taste other crab dishes the same way again.
But be warned: It’s not cheap. You can order curacha by the kilo (minimum 1 kg). The last time we dined here, a kilo of it in alavar sauce costs P1500 to P1700, depending on the size of the crabs.
The sauce alone is unforgettable. It’s so popular that tourists drop by Alavar on the way to the airport to take home frozen packs of it.

But if you’d rather take home freshly caught curacha, head over to Aderes Flea Market in Guiwan. You can purchase uncooked curacha at a lower price here, along with lobsters and other seafood.
How familiar are you with Moro dishes? A little bit? Not quite? Not at all?
If you live in Metro Manila or nearby areas, you probably haven’t tried it. (Or in my case before my Zamboanga trip, not even heard of it.) We’re used to dishes from Luzon and Visayas. Many of us are even more acquainted with foreign fare. So when in Zamboanga, have a taste of Moro cuisine!
More than a third of Zamboanga City’s population practice Islam. The Moros, Filipino Muslims, have developed a food culture that is fascinatingly different from other regions. While garlic, onions and ginger remain common ingredients, the Moros like to also use spices like galangal, lemongrass, kaffir lime and turmeric, which are more usual in our maritime Southeast Asian neighbors.

You’ll also notice that the Tausugs love using coconut milk and — get this — burnt or charred coconut, which gives many of its dishes its black appearance. It does look a little bit intimidating at first glance, but trust me, it’s super delicious. It doesn’t taste burnt at all, but it provides depth and complexity to its taste that is quite hard to describe. You’ve gotta taste it yourself.
In Zamboanga City, the most convenient place for tourists to sample Moro dishes is Bay Tal Mal. It’s because they serve latal (P959), which is a platter of various Tausug dishes including the following:
Tiyulah itum (tiyula itum or tiulah itum, literally “black soup”), beef in black broth made with burnt coconut and spices.
Beef kulma, beef cubes stewed in a curry sauce.
Piyassak, beef liver cubes cooked with pounded spices, charred coconut and coconut milk
Chicken piyanggang, chicken marinated in burnt coconut and various spices and then grilled.
Chicken kaliya, chicken stewed in coconut milk with lemongrass, turmeric, ginger and other spices.
Beef adobo
Fried fish
Fried shrimp or squid
Kiyaliya kapaya, papaya; or cucumber sambal (the sambal is so fab delish!)
Although not on the menu, I think one of the dishes on our platter was utak-utak (fried fish cake).
You can enjoy this platter of delicacies with rice. But we usually add a plate of mee goreng (P259), which is served with hard boiled egg. We just love mie goreng so we order it whenever we spot it on the menu. (LOL.) But they have a lot more items on its menu.
When I tried it for the first time, Bay Tal Mal was still located along Mayor Jaldon Street. But it has since moved to the 4th level of SM Mindpro.

Another restaurant that serves this Tausug tray of goodness is Dennis Coffee Garden, situated near the airport. Here, they call it dulang (P1100), but it’s basically the same. But while Bay Tal Mal’s platter has 10 different dishes, Dennis’s has six.
Speaking of Dennis Coffee Garden…
Dennis Coffee Garden‘s roots can be traced back all the way to 1962 Jolo, Sulu, where a small cafe called Omar’s Place was established. Sixty years later, the name has changed and multiple branches have sprouted including this one in Zamboanga City.
We already mentioned the dulang or latal that they serve here. But it is more famous for something else — you guessed it — COFFEE! Dennis Coffee Garden takes pride in their authentic coffee called the kahawa sug, which can be served hot or iced. It’s more on the strong end of the spectrum, so if you favor bold coffee, this could be for you! The iced version, however, is served with milk.

Aside from Sulu coffee, it is also popular for their bangbang sug or native Tausug pastries. We worked up an appetite earlier that day so we decided to order all of the items on their snack menu! Besides, we really wanted to try them all! Each item costs P95 now. The last time we visited (2022), it was only P65.

We also ordered pastil, which is similar to empanada with togue filling and served with a sweet and spicy sauce. (We also tried pastil in Tawi-tawi but it had bihon noodles as filling.)
Out of all of this, we enjoyed jualan saing, daral, biyaki and panggih-panggih the most!

As we explored Zamboanga City, we couldn’t help but notice that a lot of establishments serve so-called satti. We even spotted a number of regular-looking houses with signs that read, “We serve satti”. It got us incredibly curious! Satti sounds like satay (chicken satay, beef satay), so I had my ideas on what it could be. But many satti signages had illustrations of bowls, not sticks of meat, which confused us at first.
Well, well, it turned out that satti is indeed similar to satay (grilled skewered meat). But in this part of the world, it is usually served half-dipped in a bowl of red-orange spicy sauce with cubes of molded rice. And to my surprise, this is actually a breakfast favorite! Nothing beats a spicy kick to start the day!
When we asked the locals (mostly tricycle drivers) for the best satti place in the city, all fingers pointed at Jimmy’s Satti Food Haus. Unfortunately, due to time constraints, we failed to pay a visit. Too bad!
(That said, we were able to try satti at Dennis Coffee Garden! I’m a sucker for anything grilled and spicy, so it was love at first bite for me. I still wish I got to try Jimmy’s though. But I guess this gives me a reason to return to Zamboanga!)

If you’re craving pork, you might be surprised to know that one area in Zamboanga has mastered the art of making lechon! Yes, whole pig roasted to perfection! Here in Tetuan, lechon is sold at kiosks stationed along the road. And there are lots of them here!
I was quite shocked to learn about it at first because the city has a significant Muslim population. Before setting foot here for the first time, I initially (mistakenly) assumed that pork — a staple protein in Pinoy kitchens elsewhere — would be notably absent in most parts of the city because it is forbidden in Islam. But there it was, a street lined with pork lechon stalls selling kilo after kilo of suckling pig.
When we asked locals for recommendations, one establishment that was consistently mentioned was Prince Tasty Lechon. They have multiple stalls throughout the city, but we chose the one in Tetuan, just a short walk from Alavar.
Like others beside it, Prince is a small stall with a suckling pig on display as a staff member chops away. You can ask for a piece of the crispy skin to have a taste. A kilo costs P550 (as of January 2025, it’s now P600). You can also order half a kilo, which is at P350. You can have it as a whole slab or have it chopped.
Tetuan lechon is often compared to Cebu’s more famous version. Once you taste it, it’s not difficult to understand why. It’s just so flavorful! The skin is super crispy but not hard; it breaks with the gentlest of bites. The meat is moist, juicy and tender. The combination of calamansi, garlic, onions, pepper, bay leaf and other herbs seeps so deep into the meat. We weren’t given any sauce. Not sure if it really is eaten without it or the staff just forgot. But regardless, there’s no need for it.
If a kilo or half a kilo is still too much for you, you can order a combol meal from Prince Foodcourt, located on Estrada Street, just a short walk from their stall along Don Alfaro Street. For P150, the set includes 200 grams of lechon, two cups of rice, a small bowl of soup, and a drink.

So far, we’ve already covered mostly main courses and heavy proteins. How about we move on to dessert?
Here in Zamboanga City, no other dessert has reached the legendary status of the knickerbocker. The what?
Knickerbocker! Think of it as the fruitier, healthier stepsister of the halo-halo. This crazy colorful concoction is a mix of jellies and fresh fruits like watermelon, apple, pineapply and mango, drizzled with condensed milk and topped with strawberry ice cream. It’s bright, sweet, and creamy, perfect for washing down whatever lunch or dinner you had.
These days, you can enjoy a cup from vendors at Paseo del Mar, but if you’re after the original, head over to Hacienda de Palmeras Hotel and Restaurant, widely regarded as the establishment that invented this tropical dessert. The restaurant is set in a garden in a quiet corner of the city, but still easily accessible by jeepney or tricycle.

Of course! Any TPT trip isn’t complete without pillaging the parks and back alleys for some good old-fashioned street food! These everyday accessible munchies tell a lot about the place, its people, and its culture. You can find street food anywhere, especially in busy areas like the public market and around the city hall.
Usual Pinoy faves like kikiam, fish balls and banana que are available, but you’ll also find something unique to the region. My favorite is chikalang. No, not chika lang. Chikalang! It’s a glutinous rice cake rolled in brown sugar. It’s very similar to pilipit or karioka, only bigger, denser, heavier and very very purple.
It’s usually among the many items on peddlers’ bilao. We had it at Paseo del Mar!

R.T. Lim Boulevard also hosts a number of street food vendors. Some of the street food choices are satay or “ihaw-ihaw”, pastil, and lokot-lokot. You’ll also find balut and penoy as soon as the sun starts to set.
On our last visit, we noticed locals selling something in styrofoam containers. Curious, we approached one and asked what was inside. To our (delightful) surprise, it was mie goreng! It’s served with fried egg on top and a calamansi on the side, and drizzled with hot sauce. At that time, we snagged it for only P35!
Coincidentally, we were just talking about craving noodles just moments before so we didn’t even think about it! We also had a nice conversation with Kuya Jul, the seller, as we stuffed our face with noodles.

Aston Martin is returning to the pinnacle of endurance racing with its Valkyrie hypercar. It will compete in the FIA World Endurance Championship (WEC) and IMSA WeatherTech SportsCar Championship this year.
The Aston Martin Valkyrie will compete against brands like Ferrari, Porsche, Toyota, Peugeot, BMW and Cadillac. However, it’s the only competitor that is derived from a road-legal hypercar.
Aston Martin will run two Valkyrie hypercars piloted by Harry Tincknell, Tom Gamble, Marco Sorensen and Alex Riberas in WEC. Ross Gunn and Roman de Angelis will race for the team in IMSA.
The car itself looks very similar to the Valkyrie AMR Pro. However, it has been modified to comply with racing regulations. The 6.5-liter V12 has been de-tuned from 1000+ hp to 680 hp. It is now paired with an Xtrac transmission. The car also gets a single-point rapid refuelling coupling, a high-speed pneumatic jack system and a slightly redesigned cockpit for better ingress and egress.

Genesis is going racing with a V-8-powered hypercar both at Le Mans and around the world in 2026
Genesis has likely built another X Gran Berlinetta Concept car and put it on the track at Australia’s Bathurst Mount Panorama Motor Circuit with Jacky Ickx behind the wheel.
This is likely the third version of the car. The first X Gran Berlinetta Vision Gran Turisimo debuted as a full-scale model ahead of its video game debut in 2023. Genesis then said it built a working version of the hybrid hypercar in 2024. At the time of the transformation from concept to reality the car was modified into a race car.

At the time it wasn’t understood that the automaker was telegraphing its future.
On Friday, Genesis brought Jacky Ickx back to the legendary Bathurst track. Ickx won the Bathurst 1000 45 years ago at the Australian circuit. Ickx’s return, this time as a performance ambassador for Genesis, placed him behind the wheel of the electric Genesis GV60 Magma concept and the X Gran Berlinetta Concept.
Ickx noted he was “blown away by the X Gran Berlinetta Concept,” and described it as “wildly powerful and loud.”
The video posted to Genesis’ Instagram account and Ickx’s notes don’t jibe with what the Genesis originally claimed would power the car. Genesis said the X Gran Berlinetta Concept would be powered by a hybrid powertrain consisting of a V-6 engine mounted front-midship along with a single electric motor. The company said an electric compressor would help the gas engine produce 870 hp and the electric motor would add another 670 hp. Total system output was said to be 1,540 hp in concept form, and the original video game concept was said to have 1,071 hp.
As the video demonstrates, the car that ran at Bathurst sounded like it has a V-8 engine.
The concept running laps at Bathurst also had a center-mounted exhaust system, which was not found on the two original concepts.
Genesis X Gran Berlinetta Concept
The V-8 sound from the X Gran Berlinetta Concept doesn’t sound like most V-8s. That may be the result of putting two inline-4s together into a vee configuration. That’s the powertrain with hybrid assist that Genesis is developing for the Genesis Magma Racing GMR-001 LMDh race car, which will head to Le Mans with the FIA World Endurance Championship and the IMSA SportsCar Championship in 2026. Genesis plans to go from scale model to Le Mans in just 18 months with its race car.
All of this is part of the Genesis plan to target Mercedes’s AMG and BMW’s M brands with its Magma performance sub-brand in the coming years.

The long road to Aston Martin’s Valkyrie racing at the 24 Hours of Le Mans is almost at an end, as the automaker late on Tuesday revealed the new racing version of its hypercar.
Aston Martin has partnered with The Heart of Racing (THOR) to enter the Valkyrie race car, built to meet LMH regulations, in the premier Hypercar and GTP classes of the respective FIA World Endurance Championship (WEC) and IMSA SportsCar Championship in 2025.
THOR is a U.S. team that races to raise funds for the Seattle Children’s Cardiology Research Fund and has already successfully competed in previous years with the Aston Martin Vantage GT3 in the GT classes of the World Endurance and SportsCar Championships.
The Valkyrie will be the first LMH car to compete in both the World Endurance and SportsCar Championships. It will also be the first derived from a road car.
The WEC boasts the 24 Hours of Le Mans on the calendar, and Aston Martin is set to chase outright victory at the French classic—something it achieved only once, in 1959, with Roy Salvadori and Carroll Shelby in an Aston Martin DBR1. There’s steep competition, though, as Aston Martin will be going up against the likes of BMW, Cadillac, Ferrari, Porsche, and Toyota. Genesis plans to join the fray in 2026, with Ford following a year later.
Aston Martin said the Valkyrie LMH race car features a unique, race-optimized carbon-fiber chassis but shares its Cosworth-built 6.5-liter V-12 with the Valkyrie road car, albeit minus the road car’s mild-hybrid system. For racing, the engine will run at lower revs and use a leaner fuel mixture to meet a 670-hp cap and to save fuel. Drive still goes to the rear wheels only, and the engine is mated to an Xtrac 7-speed sequential transmission with paddle shifters. For the SportsCar Championship, the car may have its mufflers swapped out for a straight-pipe setup for a bit of extra sound and excitement.
Aston Martin Valkyrie Hypercar
The suspension consists of optimized-geometry double wishbones front and rear, together with pushrod-actuated torsion bar springs with adjustable side and central dampers. Adjustable anti-roll bars also feature at both ends. At each hub is an 18-inch wheel with a series-specific tire. The weight of the car, without the driver and fuel, is expected to meet the regulated 1,030-kilogram (approximately 2,270-pound) minimum, Aston Martin said.
Two of the cars will be fielded in the WEC and a single car in the SportsCar Championship, and both efforts will be run by the Aston Martin THOR team.
For the WEC, Harry Tincknell and Tom Gamble will pilot a number 007 car (very James Bond), while a sister no. 009 car will be piloted by Marco Sørensen and Alex Riberas. In the SportsCar Championship, a single no. 23 car will be piloted by Ross Gunn and Roman De Angelis. Gunn will also drive the no. 007 car, and De Angelis the no. 009 car, alongside their respective WEC counterparts at Le Mans.
The Valkyrie LMH’s first race will be the WEC’s opening round, the Qatar 1812 km, scheduled for Feb. 28. The all-important Le Mans round will take place in mid-June.
Another record-breaking auction, and once again, it’s a Mercedes-Benz. After the Uhlenhaut Coupé became the most expensive car ever sold in 2022 for €135 million, RM Sotheby’s has now set a new benchmark. The 1954 Mercedes W 196 R streamliner has officially become the most expensive racing car in history, fetching an astonishing €51 million at an exclusive auction.
The Indianapolis Motor Speedway Museum required funds to modernise its facilities and restore its collection of 180 iconic vehicles. As part of this effort, they parted ways with one of their most valuable exhibits: the 1954 Mercedes W 196 R, a legendary car that once claimed victory at the Argentine Grand Prix. RM Sotheby’s chose not to auction this historic race car at prestigious events such as Paris, Pebble Beach, or Dubai. Instead, a one-of-a-kind auction was held in an exclusive setting, where the car, once driven by Juan Manuel Fangio and Stirling Moss, fetched €51,155,000, setting a new world record for a racing car.
“This car, with chassis number 00009/54, is absolutely unique, and a conventional auction event wouldn’t have been the right venue,” explained Peter Haynes of RM Sotheby’s in London. “Even though the Indianapolis Motor Speedway Museum was selling it, its history is inseparably linked to Mercedes-Benz, making this museum the perfect setting for a single-car auction.”
At least one bidder was physically present at the Mercedes-Benz Museum, while others placed their bids remotely via RM Sotheby’s representatives, often after weeks of negotiations. Under the spotlight, the silver Mercedes W 196 R streamliner, adorned with race number 16, sat centre stage. Conducting the auction was Sholto Gilbertson, who brought down the hammer after 14 minutes, announcing: “Sold for €46.5 million.” With buyer’s premium and tax included, the final price rose to an astonishing €51,155,000.
Unlike typical auctions featuring multiple items, this exclusive sale revolved around a single car. Prospective buyers had to pre-register, receiving a unique bidder number for placing their offers. The winning bid belonged to number 6128, but the identity of the buyer remains strictly confidential. The bidding process followed a structured path, increasing in increments from €20 million to €46.5 million, leaving no doubt that the Uhlenhaut Coupé’s 2022 record would remain unchallenged.
“This outcome isn’t surprising, as a Formula 1 Grand Prix car is far more specialised than a road-going model, which appeals to a broader market,” noted Peter Haynes.
While extensive preparation was required for the sale, auctioneer Sholto Gilbertson’s role was relatively straightforward. Only a handpicked group of elite collectors had been meticulously vetted in advance, with most participating via telephone bidding.
“There is only a very select group of individuals worldwide capable of acquiring such an exceptional racing machine,” explained Peter Haynes. “Our experts spent months identifying and approaching potential buyers, ensuring that only serious contenders were involved.”
Even Mercedes-Benz and the Indianapolis Motor Speedway Museum remain unaware of the buyer’s identity, as confidentiality is paramount in such high-stakes transactions. While some expected the car to fetch €60 million or more, the final €51.15 million still marks an unprecedented achievement.
After 14 tense minutes, relief spread across the room. Marcus Breitschwert, head of Mercedes-Benz Classic, and the RM Sotheby’s team were delighted that months of preparation had resulted in such a historic sale.
The new owner now possesses a true automotive unicorn. The W 196 R is the only example of its kind in private hands. Before the auction, the monoposto underwent extensive evaluation, ensuring that its new custodian would face no unexpected surprises.
Unlike the Uhlenhaut Coupé, which was sold by Mercedes-Benz, the Indianapolis Motor Speedway Museum had been the owner of this priceless race car since 1965, when it was gifted by Mercedes-Benz. For the past six decades, it remained one of the museum’s crown jewels, displayed just a stone’s throw from the legendary Indianapolis Motor Speedway.
Now, it will disappear into the private collection of an unknown buyer—wherever in the world that may be.
